Recipe: Six Degrees Granola

Six Degrees member Susan Turnquist knows that, when it comes to an active summer, having a tasty bag of granola in our purse or gym bag is essential. That’s why she’s created this easy, ultra-adaptable recipe to share!

Six Degrees Granola*

Shopping list:

3C rolled oats (any combo of rye, barley, wheat, etc. works)

1C chopped nuts (mix it up! pistachios, pecans, walnuts…)

1C unsweetened coconut chips (if you’ve just got shredded on hand, go for it!)

1/3 C pumpkin seeds (AKA pepitas)

1tsp salt

1/4 C brown sugar

1/3 C maple syrup or honey

3/4 C dried fruit (whichever you like–larger fruits should be chopped)

*This recipe is an easy organic snack if you purchase organic ingredients. Either way? Delicious.

Preheat oven to 300°. Mix first five ingredients in a large bowl (leave dried fruit for later). In a small saucepan over low heat, warm the brown sugar, syrup or honey, and olive oil until the brown sugar dissolves. Remove from heat and pour sweet mixture into oats, coating all of the dry ingredients. Line a large rimmed baking/cookie sheet with parchment paper and spread out your sticky granola. Bake until dry and lightly golden, 25-30 min. To keep it chunky, do not disturb the granola during baking. After it’s done, stir in your dried fruit and allow to cool to room temperature before transferring into an air-tight storage container. Makes 6 Cups (Six Degrees style!).
